Colorful & flavorful bean, corn & mixed vegetable salad inspired by one of my favorite Mexican street dishes: Elote con Vaso or Esquites (Seasoned Corn in a Cup).

Cooking instructions
* Step 1
In a medium bowl, mix warmed black beans with all ingredients except cream
* Step 2
Transfer to a shallow serving dish. Top with cream in the center or on individual portions & serve as a side dish or a snack.
