Potato Soup

Cooking instructions

* Step 1

1) Do ahead: dice bacon & cook in skillet until all fat is rendered. Drain & set aside. 2) Do ahead: cut potatoes into 1/2 inch dice & put them into pot with water to cover. Boil 10 min drain & set aside. 3) Melt butter in heavy pot add flour, whisking constantly until paste is smooth gradually add half & half, milk, and chicken stock, whisking constantly. When it starts to thicken add velveeta cheese whisking frequently. 4) Add the potatoes to the cheese mixture. Season to taste with white pepper, garlic powder,& add hot sauce. Lower heat & simmer, covered, 30 min stirring occasionally. 5) Ladle soup into warm bowls & garnish with bacon bits, shredded cheddar, chives & parsley.
