White asparagus "a la Flamande"
White asparagus are a true delicacy, there are much more subtle then there green family There only available from now till the 24 of june. This is the most common way of serving them in Flanders. Simple yet delicious.

Cooking instructions
* Step 1
Peel the asparagus toroughly with a speed peeler
* Step 2
Cook in boiling water for about 12 min. They must still have some bite. Cook 2 eggs for 8 min
* Step 3
Cut the parsley fine.
Me´lt the butter do not brown it.
Peel and cut the eggs fine.
* Step 4
Put the asparagus on a nice plate. Put eggs and parsley on the bottom and drizzle with butter. Put some salt on it. Serve hot. Either as a starter for 2 or main course for 1
