California Farm Wagyu Beef Mince Tacos
Wagyu lean beef mince, mixed with regular ground beef, is becoming affordable, beautiful quality, one pound makes eight tacos, two per person, enough for four people.

Cooking instructions
* Step 1
Put cup of dried black beans with 8 cups water and pinch of salt in sauce pan with lid, soak overnight, then, bring to boil, simmer till soft, few hours. Add water as needed. For instant black beans, use frozen black bean cubes
* Step 2
Heat the Wagyu minced beef in a dry cast iron skillet till the juices are released, pour juices in measuring cup to fry the fresh taco shells, keep beef warm under kitchen towel.
* Step 3
Mix cup of purple corn flour with boiling water in measuring cup into dough, roll into big ball, rest a few minutes.
* Step 4
Roll dough ball into sausage shape, cut in half, half again, half again, make eight balls. Press one tortilla per ball.
* Step 5
Grate the cheese, chop the vegetables, shred the lettuce, layer your taco spoon by spoon: shredded lettuce, yoghurt, hot beans, grated cheese, chopped sweet pepper, red onion, warm minced beef, chopped green onion, chopped tomato.
* Step 6
Fry the tortilla in dry hot skillet till blistering, hang over wooden spoon handle to crisp.
* Step 7
Make two tacos per person in bowl. Drizzle with lime juice. Drink with ice cold chelada, a bloody mary made with mexican beer instead of vodka.
