Split Pea and Ham Soup

Split Pea and Ham Soup

This is a healthier version of my ham soup. The blended peas add some sweetness while giving the soup a nice hardy thickness.

Ingredient

Cooking time :

10-12 lbs

ham

4 stalks

celery, sliced

1/2 tsp

onion powder

1/2 tsp

paprika

Cooking instructions

* Step 1

Preheat oven to 325 degrees. Cook ham for 1.5-2 hours. Let stand 30 minutes. Slice ham best you can leaving about 2 cups of meat on the bone.

* Step 2

Place bone in a large stock pot, add in enough water until it covers the bone. Add 1 whole onion and 2 bay leaves. Bring to a boil. Simmer for 1.5 hours.

* Step 3

Take out ham bone and whole onion. Add the split peas, bring to boil and let simmer for 15 minutes.

* Step 4

Add in onions, carrots, celery, garlic powder, onion powder, paprika, and parsley Simmer for 25 minutes.

* Step 5

Use an emulsion blender until desired thickness. We like to leave it a little chunky still.

* Step 6

Bring back to simmer and add in the chopped ham and horseradish. Enjoy!
