8 minute Spanish rice

Easy and delicious. My pregnancy cravings have been hitting hard so I usually eat it plain or covered in queso. Pairs great with any Mexican dish. Tacos, enchiladas, burritos, bowls, mole, empanadas, or with breakfast of chorizo and eggs. *the cons mate can be found in the Latin aisle at Walmart for about .55 cents or at any international or Spanish grocery store.

Ingredient

Food ration :

2 cups
1 teaspoon

butter

2 tablespoons

canned diced tomatoes

1/3 cube

cons mate

Cooking instructions

* Step 1

Place butter and rice in saucepan over medium heat and cook until lightly golden brown stirring constantly.

* Step 2

Mix cons mate, garlic, onion and broth in a bowl and place in microwave until boiling.

Pour broth and spice mixture over rice, stir in diced tomatoes, cover and reduce heat to simmer. Simmer for 5 minutes or until rice is soft. Fluff with a fork.
