There is no vinegar in this recipe. So the salt becomes the preservative. If you want to use less salt then do the following. Dissolve salt in water, put an egg still in its shell into the water. If it floats then you have enough salt in the water. Heat the water with the mustard seed, salt and big bay leaves in it. When water is dissolved add to Fermentation Jar. Add in the saffron. Add the top to jar and add water to the moat, to seal.

Allow to ferment for 6 weeks. Add water to the moat as needed. I hope you enjoy!!!
