Americanized version of British Pickle
Ok I know this may not be exact, it may not be close. Imported foods are hard to get unless you have a bunch of cash. So I made my own. I hope not to offend. Don't worry I will still buy my Jelly babies and HP Sauce.....
Cooking instructions
* Step 1
Wash and peel the carrots. Chop them up, add to a big pot. Dice the zucchini.
* Step 2
Peel the rutabaga and dice it. I have always found it hard no matter how sharp the knife is to cut a rutabaga up. So please be careful. Chop the gherkins.
* Step 3
Add to the pot everything so far. I cut the ends off one side of the lemons stick a fork or butter knife inside and twist it. This is an easy way to get it to juice with some pulp.
* Step 4
Take the skin off the pitted dates. Add them to the pot.
* Step 5
I saved the apples for last peel and chop them up. Add everything else to the pot except tomato paste. Put the pot on to boil.
* Step 6
Cover and simmer. Allow to cook till the chutney is getting tender and a little soft. Mashing it a bit as it cooks down. Taste as you go. After 1 hour of simmering, add in the tomato paste. Simmer 20 minutes covered. You can mash this to your desired chunkiness or as smooth as you desire.
* Step 7
After 20 minutes add to a jar and seal. Store for 6 weeks it will be ready. Just to let you know we had some now and it was delicious. I hope you enjoy!!!
