Eggplant Casserole 2024

My uncle brought us some eggplants, so I cook it up reminiscing about dishes I ate growing up.

Cooking instructions

* Step 1

Wash the eggplants. Remove the ends and discard the end pieces. Peel and dice the eggplants. Put the eggplant pieces in a bowl, and salt them. This will pull the bitter black juices out of the eggplant. Preheat the oven to 400° Fahrenheit.

Brown the ground chuck and salt to taste. Drain the liquids and rinse the eggplant. Taste your caponata, unless you made yours homemade. This way you know what flavors you're adding to the casserole.

* Step 3

Add the eggplant and butter to the meat and continue to brown. Add in the sauce, Parmesan cheese, and salt if needed. Add to a baking pan and gently shake letting the casserole find its levelness.

* Step 4

Add the cheese to the top of the casserole, put into the oven and bake for 20-25 minutes. Allow to rest for 10 minutes. Serve, I hope you enjoy!!!
