Pineapple watermelon Sorbet with blackberry Parfait

Parfait refers to two types of frozen dessert; in France, where the dish originated, parfait is made by boiling cream, egg, sugar and syrup to create a custard-like puree which is not necessarily served in a parfait glass. The American version includes more ingredients like granola, nuts, yogurt and liqueurs made in combination with a topping of fruits or whipped cream that are layered and served in a tall glass.

Cooking instructions

* Step 1

For Sorbet: In a medium saucepan, bring water anh8d sugar to a simmer over medium high heat until sugar is dissolved.

* Step 2

In a food processor, puree pineapple with it's juice until smooth. Transfer to a metal bowl, and stir in syrup, lemon juice, orange juice, and orange zest.

* Step 3

Process mixture again in the food processor or beat with an electric mixer until smooth.

* Step 4

Transfer to a freezer container and freeze until firm, about 2 hours.

* Step 5

For Parfait: Mash the blackberries lightly and refrigerate for half an hour.

* Step 6

Vanilla extract with electric beater. Fold the berry mixture in whipping cream gently.

* Step 7

Assembling: Layer the Pineapple sorbet then Strawberry and then crushed nilla wafer layer and finally top it with berry parfait. Chill for at least 1-2 hour. Top with extra whipped cream, crushed nuts of your choice or nilla wafers.
