Cooking instructions

* Step 1

First sieve the besan and keep aside

In a bowl take water sugar haldi powder citric acid salt and oil and mix well

Now slowly slowly add besan and mix well

Keep it aside for at least one hour

* Step 5

After one hour take a dhokla pan add water and let it heat up place a grease plate on top

Now take baking soda and baking powder

Add soda and baking powder and 3 tbsp water in the batter and mix fast and properly

Pour the batter in a grease plate and bake for a 20 minutes

Mean while take pan and heat it up Add 1 tsp oil once oil is heated add cumin mustard seeds and green chilli and curry leaves once they crackle add 1 glass of water and boil for few seconds

Once the dhokla is cooked let it cooled down for a few minutes

After that pour the water mixture on top slowly and garnish with the coriander leaves

Your soft and spongy khaman dhokla is ready enjoy as a starter or side dish with chatuny
