Semi Homemade Vanilla Cream Cake With Ganache
I was busy! Busy , busy but needed to get a cake made for my husband's birthday. I cheated just a little. But this cake or the ganache and the cream filling is my specialty. Hope you try it.
My niece calls this The Kansas Cake. It was my go to cake while living in Kansas. Whatever you call it, delicious will be in the name.☺

* Step 1
To make the box cake mix follow these steps. It elevates the mix...
Add the ingredients above to the dry mix. Do not follow the packages directions.
* Step 2
Mix until just incorporated.
* Step 3
Grease and flour 2 8" cake pans. Divide mix evenly in the pans. Bake at 325 preheated oven (if using dark cake pans)
* Step 4
Bake for 25-30 minutes. A tooth pick inserted in the center will come out clean when done. Transfer cakes to a wired rack to cool.
* Step 5
Once cooled, I cup off the top part of the cake that has domed to get even cakes.
Note: cook gets to eat the cut off pieces😉
* Step 6
While cake is baking start the cream. In a large pot over medium heat add the milk, vanilla and flour. Whisk consistently until mixture starts to thicken. Remove from heat. Set it aside to cool.
* Step 7
In a mixer, add sugar, butter and shortening. Whisk until mixture becomes smooth. Scrape down sides and bottom of bowl.
* Step 8
It's important to mix well. It keeps cream from having a gritty texture.
* Step 9
Once thickened milk cools add it to the sugar and butter and shortening. Mix this on medium speed for about 5 minutes stopping to scrap down sides as needed. It should be smooth and creamy when mixed well enough. Refrigerate for 30 minutes.
* Step 10
Start the ganache. In a large sauce pan heat heavy cream over medium heat until it just comes to a simmer. Whisk constantly.

In a large heat proof bowl add chocolate chips. Pour heated cream over chips. Add in vanilla. Whisk slowly until chips have all melted. Once incorporated and smooth, whisk in butter. Whisk slowly to incorporate. Let ganache cool for about 20 minutes.
* Step 12
Assemble cake...
Place one cake round on bottom of platter. Add the cream and spread it evenly over top of cake. Add the other cake round on top of that. Before pouring cooled ganache on top whisk it lightly. The pour directly over the center of the cake. Let it flood the top layer. Then let more drip down the sides. You may have some ganache left over. Don't pur too much or cake will break. I added a ring of chopped peanuts around top edges. Chill cake at least 1 hour before serving.
