Stuffed Butter Cookies
A little surprise tucked into a delicate butter cookie. Only made during the holidays because they are just so sinfully decedent.

Cooking instructions
* Step 1
In large bowl mix butter with powdered sugar. Mix on medium low speed until creamy
* Step 2
Add egg, vanilla and liqueur. Mix well.
* Step 3
Add in flour and mix until just incorporated. Do not over mix.
* Step 4
Wrap dough in plastic wrap and chill for 1 hour.
* Step 5
Take one large tablespoon of dough and roll into a ball. Flatten it with your hand and place 1/2 teaspoon of mint candies in the center. Pinch dough up to cover candies. Lightly roll back into a ball.
* Step 6
Preheat oven to 325 degrees. Line a baking sheet with parchment paper. Place cookies on sheet spaced apart. Lightly press flatly on each cookie with your hand.
* Step 7
Bake 20-25 minutes until edges just lightly brown. Cool on wire rack.
* Step 8
You can serve as is or lightly dust with powdered sugar.
