Spinach Artichoke Soup
I love Spinach Artichoke Dip and decided it would make an excellent soup. The family loves it. We serve it with pan toasted bread seasoned with Garlic Butter.
Cooking instructions
* Step 1
Individually. Roughly chop Fresh Spinach, Onion, and Artichokes in Food Processor, or by hand.
* Step 2
In a large pot melt butter. Saute onions in melted butter until they are soft. Careful not to scorch them.
* Step 3
Add flour and stir until smooth. Heat thoroughly to allow the flour to absorb the flavor.
* Step 4
Gradually whisk in the milk. Heat until thickened.
* Step 5
Stir in Artichokes, Spinach, Lemon Juice, Parmesan Cheese, Broth, and season to taste.
* Step 6
Bring to a slow simmer for about 10 minutes. Do NOT boil.
