Slow Cooked Italian Pork
Tender pork roast in tomato sauce. Delicious and worth the prep and cook time. (Crockpot directions included)
Cooking instructions
* Step 1
In Dutch oven, add 2 tbsp olive oil and brown pork on all sides.
* Step 2
In a bowl, crush the whole tomatoes and put into the pot with diced tomatoes and tomato paste. Add spices, onion, and garlic.
* Step 3
Put into 300° oven and bake for 3 hours.
* Step 4
Uncover, stir, bake for 1-1 1/2 hours uncovered.
* Step 5
Remove pork allow to cool, and bring sauce to simmer on the stove to thicken. Add salt to taste.
* Step 6
Pull pork into smaller pieces and serve covered in sauce, sprinkled with parmesan cheese. Alternately you could shred this like pulled pork, but I prefer bigger chunks of meat.
* Step 7
This can also be cooked in a crockpot, be sure to brown the meat first, and drain the diced tomatoes before adding them. Also obviously don't remove the lid for the last hour. Cooking time should be the same if cooked on high, 7-8 hours on low
* Step 8
Serve hot, sprinkled with parmesan cheese.
