Rich and Creamy Mashed Potatoes (in a pressure cooker!)
This large mashed potato recipe is rich since the potatoes are steamed with chicken broth and the addition of cream cheese and yogurt, but the best part is you can use your pressure cooker (or slow cooker!) to free up kitchen space which makes this a great recipe for thanksgiving.
Cooking instructions
* Step 1
Add the water, bou cubes, onion and garlic to the bottom of the pressure cooker.
* Step 2
Pile the potatoes on top.
* Step 3
Pressure cook on high pressure for 15 min with natural pressure release. Alternatively cook in a slow cooker on low for 5-6 hours.
* Step 4
Check the potatoes are soft.
* Step 5
Add the butter, yogurt, and cream cheese.
* Step 6
Mash the potatoes and taste for seasoning. If you want, add water or milk to your desired consistency. Sprinkle with parsley.
