California Farm Teasmoked Chicken Wings with Pickled Mango

We serve these lean, smokey wings for people who dont like the fat in Buffalo Wings, with spicy pickled green mango in pepper oil. We call them Mango Wings.

Ingredient

Food ration :

12 wings. Six people

Cooking time :

2 hour smoke, 18 minute finish.
3 Tsp

seasalt

3 Tbs

olive oil

Cooking instructions

* Step 1

Soak 12 wings in salted water, drain on kitchen towel, shake in plastic bag with granulated garlic, pepper and olive oil

* Step 2

Light half a metal cup with hard wood chips and Tbs butter under broiler, ten minutes. Place wings on oven rack, 250 F degrees. When flaming, blow out flame, sprinkle half a cup of loose tea on top, place in airfryer oven under the wings, smoke till you like the tea color, about two hours.

* Step 3

When you like the color, turn heat up to 450F degrees, bake the fat out, 18 minutes. Serve with spicy pickled green mango in pepper oil, it is a treat.
