Canteen's Vermicelli Noodles

Use eggs as base & add your preferred seafood (squids, prawns or thinly sliced fishballs or fish cakes).

Cooking instructions

* Step 1

For stir frying, avoid soaking Vermicilli in hot water. Soak noodles in room temperature water instead. Prepare the rest of the ingredients.

* Step 2

Sauté ingredients in B. Start by heating oil in a deep big pan or a wok, then add choppedonion, sauté until translucent. Push sautéed garlic & onion to the side of the wok. Add eggs. Let it set slightly then stir-scramble the eggs until it resembles soft/wet scrambled eggs. Add mix veggies right away. Mix well with eggs, onions for a minute or two. Add your preferred #protein (if using). Stir and mix well.

* Step 3

Add C (seasoning & sauces). Add more sauces if needed. Stir to combine with the rest of the ingredients. Add the noodles. Mix well. Keep stirring the noodles to mix it well with the rest of the ingredients. Stirring and mixing take times. This is to make sure the noodles is well cooked and well-infused with the sauces. Taste your noodles and adjust the seasonings to your liking.

Garnish with chopped coriander.
