Cauliflower "Mac" and Cheese
Cauliflower, the iconic vegetable that stands in for all sorts of foods is featured here in a "mac" and cheese dish. Rich, creamy and so delicious with cauliflower standing in for the pasta!

Cooking instructions
* Step 1
Preheat the oven to 375. Spray a baking dish large enough to hold cauliflower with plenty of room for the sauce with non stick spray
* Step 2
Pre cook cauliflower in either chicken broth or salted water for 3 minutes, drain well
* Step 3
Heat cream in a saucepan, add borsin cheese, dijon, lemon, hot sauce and pepper stir until mixture is smooth
* Step 4
Combine cheddar, romano and emmantal cheese in a bowl
* Step 5
Add half of cheese blend to sauce, off heat, and stir in with chives and parsley
* Step 6
Combine sauce with cauliflower and add to prepared pan
* Step 7
Top with remaining cheese
* Step 9
Bake until hot and cheese is melted about 15 to 20 minutes
