Mexican Beans & Rice

Easy and delicious recipe taken from the World of the Happy Pear

Ingredient

2 cloves

garlic

4 tablespoons

water

2 cans

mixed beans

1 can

sweetcorn

2 tablespoons

tomato puree

2 tablespoons

ground cumin

1/2 tablespoons

smoked paprika

1 teaspoon

ground allspice

2 1/2 teaspoons

salt

1 cup

rice

Cooking instructions

* Step 1

Chop onion and garlic then cut red pepper

* Step 2

Put onion and garlic into a large saucepan with the water and cook on high heat for 5mins (add more water if necessary)

* Step 3

When onions are soft add red pepper and cook for 5 mins

* Step 4

Drain mixed beans and sweetcorn, rinse them and add to pan along with chopped tomatoes, tomato puree, lime juice, cumin, paprika, allspice, pepper and salt.

* Step 5

Mix everything and bring to boil then simmer in low hear for 5-10mins

* Step 6

Cook rice, chop coriander, add to beans and serve
