Irish Stew

Cooking instructions

* Step 1

In a pot, add 1 tbsp oil and add onion to cook until translucent. Set aside.

* Step 2

In the same pot, add carrots and celery cook for about 5 mins. Set aside.

* Step 3

Mix flour with salt and pepper. Pat dry the beef and toss the meat in the flour.

* Step 4

Heat the oil and butter in a pot, fry the beef for about 3 mins.

* Step 5

Add tomato puree and continue to cook for 5 mins.

* Step 6

Add salt pepper, minced garlic, thyme, half the potatoes, 2 cups of water, beef stock cube and bring to low heat. Simmer no.3 for 2.5 hours.

* Step 7

Prepare bacon in the oven on a tray so the it doesn't drip until crispy. Set aside.

* Step 8

After full 2.5 hours, remove the lid. Add the rest of potatoes and cook for an additional 30 minutes to reduce the broth. Remove the thyme stems, add minced parsley.

* Step 9

When done, add bacon, salt and pepper to taste. Serve with some soda bread.
