Chicken Breasts in a Lemon and Caper Sauce
Cooking instructions
* Step 1
Put the flour on a large plate and season with salt and pepper. Dip the chicken in the flour to lightly coat. Shake off any excess flour.
* Step 2
In a pan, heat the oil and 2 tbsp of butter. Add the chicken and fry for 5-6 mins each side until golden brown.
* Step 3
Add the sauce to the pan. Stir and scrape the bottom of the pan to release any sticky bits left from the chicken. Bring to the boil, stirring and boil for 1 min. Add the parsley and 1 tbsp of butter and simmer for another min.
* Step 4
Serve the chicken with mashed potato, salad.
