Delicious Bitter Melon, Egg & Tuna Salad
My mother-in-law grows her own bitter melons, and she taught me this recipe. I gobbled it all up since it's not bitter at all. It's great for kids, too!
Cooking instructions
* Step 1
To begin, boil 2 eggs. (While they're cooking, let's prepare the bitter melon)
* Step 2
Mash the eggs roughly using the back of a fork.
* Step 3
Slice the bitter melon in half, and scoop out the seeds and pith with a spoon. Scoop it out thoroughly, or it will taste bitter!
* Step 4
Slice the bitter melon thinly. Coat with a little salt, and let sit for 10 minutes.
* Step 5
Parboil the bitter melon in boiling water (or the same water from boiling the eggs). Let cool in cold water, and squeeze with your hands to drain out the excess moisture.
* Step 6
Add the squeezed bitter melon, canned tuna, mayonnaise, and yogurt into the bowl of boiled eggs. Season with salt and pepper if you'd like.
* Step 7
You're all done! I used yogurt and oil-free canned tuna to cut down on as many calories as I can, but please personalize this recipe to suit your taste.
