Asian style Light lunch soup

Asian style Light lunch soup

Cleaning the fridge before newyear. I had the idea of making it in to an Italian style soup but ended up in Asia. Leaf out whatever you hate and add whatever you like or have laying around. A little cutting work but easy to make and rather healthy.

Cooking instructions

* Step 1

Soak the noodles

Sweat the onion and garlic and add other veg (except peas). Cook for 5 min

* Step 3

Cover with water. Add stock cubes let cook for 10 m

* Step 4

Meanwhile Cut tofu in small cubes. Bake in the remaining oil. Add soy,fish sauce, mirin, oystersauce,and spices

* Step 5

Bake until sticky

* Step 6

Add peas to broth. Let them warm

* Step 7

Assemble the soup. Put in tofu and noodles

* Step 8

Garnish with sesame oil, nuts,fennel green and some cucumber
