Meatless Enchilada Pie

Ingredient

2 cans (14.5 ounce)

diced tomatoes

2 cans (16 ounce)

refried beans

2 cans (10 ounce)

red enchilada sauce

1 can (4 ounce)

jalapeño peppers

1 can (2.25 ounce)

sliced black olives, drained

1/8 teaspoon

black pepper

1 teaspoon

chili powder

1/4 teaspoon

ground cumin

1 tablespoon

garlic powder

Cooking instructions

* Step 1

Heat some olive oil in a large skillet…..

Sauté your chopped onion and orange pepper until tender …..

Add to skillet your diced tomatoes, refried beans, enchilada sauce, jalapeño peppers, sliced black olives, black pepper, chili powder, ground cumin and garlic powder, bring to a boil, stirring occasionally……Lower heat and cook for 20 minutes, stirring occasionally, uncovered..

Meanwhile spray a 9X 13 inch baking pan with canola oil cooking spray…….

Layer one large burrito wrap at the bottom of your pan ……

Spoon several spoonfuls of your enchilada sauce mixture on top of flour burrito……Repeat process until all enchilada mixture is used up, layering flour burrito then spooning sauce on top ……

Spread your shredded cheddar cheese on top and bake in a preheated 350 degree oven for 30 minutes, or until all cheese has melted and is lightly browned on top……

Let cool for about 20 minutes, cut into squares, serve with yellow rice and enjoy topped with sour cream ! 😋
