Meatless Enchilada Pie
Cooking instructions
* Step 1
Heat some olive oil in a large skillet…..
* Step 2
Sauté your chopped onion and orange pepper until tender …..
* Step 3
Add to skillet your diced tomatoes, refried beans, enchilada sauce, jalapeño peppers, sliced black olives, black pepper, chili powder, ground cumin and garlic powder, bring to a boil, stirring occasionally……Lower heat and cook for 20 minutes,
stirring occasionally, uncovered..
* Step 4
Meanwhile spray a 9X 13 inch baking pan with canola oil cooking spray…….
* Step 5
Layer one large burrito wrap at the bottom of your pan ……
* Step 6
Spoon several spoonfuls of your enchilada sauce mixture on top of flour burrito……Repeat process until all enchilada mixture is used up, layering flour burrito then spooning sauce on top ……
* Step 7
Spread your shredded cheddar cheese on top and bake in a preheated 350 degree oven for 30 minutes, or until all cheese has melted and is lightly browned on top……
* Step 8
Let cool for about 20 minutes, cut into squares, serve with yellow rice and enjoy topped with sour cream ! 😋
