Sig's Celeriac, prawn and carrot salad
On warm days I love the flavour of a good celeriac slaw. I kept this chunkier than julienne, but you can refine it. Hope you will like it as much as I do. Here I served it with leftover pasta and a chicken leg. Incidentally the pasta also goes lovely with the salad. You could serve this as a past salad. #mycookbook #prawns #root vegetables
Cooking instructions
* Step 1
Slice the celeriac, then cut the slices into thin strips. Peel carrot and cut them into small strips too.
* Step 2
Mix straight away with the lemon juice, pepper and fish seasoning. Add the mayonnaise, mix thoroughly. Grate the lemon skin, avoid any pith as this will be bitter and remove any pips. Stir into the salad. Add the prawns, mix under. Set aside in fridge until ready to serve.
