Vickys Balsamic Roasted Vegetables, GF DF EF SF NF
This is delicious side for pork, chicken, fish or beef or even as a salad eaten on it's own. I love colourful food and this is one of my favourites

Cooking instructions
* Step 1
Preheat the oven to gas 7 / 210C / 425F and line a roasting tin with foil
* Step 2
Chop the peppers and onions into inch squares and thickly slice the courgettes and halve each round. Place on the roasting tin
* Step 3
Drizzle the oil and balsamic over, then shake over the oregano, basil, garlic powder & sugar and season well with salt and pepper. Toss well to coat
* Step 4
Roast for 35 minutes or until beginning to caramelise and turn golden
* Step 5
Delicious with chicken, pork and fish dishes
