Vickys Cereal-Breaded Chicken Goujons GF DF EF SF NF
Chicken goujons are delicious but store bought ones are often full of salt. These have the added benefits of using a fortified cereal and you can use gluten-free cornflakes, rice krispies or any plain cereal you like. The kids will love this!

Cooking instructions
* Step 1
Preheat the oven to gas 6 / 200C / 400F and put a wire rack above a baking tray
* Step 2
Put the flour and pepper in a shallow dish, melt the butter in another and add the crushed cereal to a third
* Step 3
Coat the chicken strips in the flour
* Step 4
Then dip quickly into the melted butter and roll in the crushed cereal
* Step 5
At this stage you can freeze them if you like. FYI half the recipe fed my 3 children so I froze half. Defrost before cooking as instructe below
* Step 6
Space out on the wire rack
* Step 8
Serve with potato waffles, mash, beans, peas, sweetcorn etc
* Step 9
You can do fish fillets in the same way. Just bake for slightly less time
