Coconut milk makes for a great substitute for dairy in this as it's thick & creamy. There is a slight hint of coconut in the finished sauce, not overpowering at all, just adds another dimension

Cooking instructions
* Step 1
Put the milk, sugar and salt in a saucepan over a medium heat until the sugar is dissolved
* Step 2
Turn up the heat and let the mixture boil
* Step 3
20 - 30 minutes later it should be darker in colour and have reduced by a quarter to around 300mls
* Step 4
Pour into a glass jar, let cool then chill
* Step 5
Keep in the fridge for up to 3 weeks - if it lasts that long!
* Step 6
