Sausage Potato and Cheese Enchiladas
I was reading about pierogis. I thought the filling sounded delicious, so I thought why not turn it into an enchilada recipe.
Ingredient

Cooking instructions
* Step 1
Dice the potatoes and onions
* Step 2
Now cook off the pork sausage in a pan, toss in minced garlic, hit it with all the spices.
* Step 3
Now let's cook the potatoes and onion in a little canola oil. Again were gonna hit the vegetables with our spices.
* Step 4
In a bowl mix together the sausage,potatoes, onions and cheese.
* Step 5
Coat the bottom of the baking dish with enchilada sauce.
* Step 6
Use the filling to roll up enchiladas and line the dish. Top with cheese then cover in enchilada sauce. Bake off at 350 for 25-30 minutes.
