My Minted Christmas Leg of Lamb

Cooking instructions
* Step 1
Mix the finely Chopped mint with the oil in a small bowl then rub it all over the leg of Lamb.
* Step 2
Cover with silver foil and add to preheated oven 180°C for 1 hour take out baste over the lamb with the juices then add back to the oven uncovered for the rest of the time.
* Step 3
Bring out cover it and let it stand and settle for 1 hour before carving.
* Step 4
Carve and serve with mint sauce.
