Cooking instructions
* Step 2
Add the 2 tsp butter to a frying pan and fry the onions for 2 minutes until soft. Then add crushed Garlic stir in, then the dried Basil. Cook for 1 minute.
* Step 3
Add the veg to a large pan then add 2 litres of boiling water add on the heat bring to the boil and cook on medium heat for 5 minutes
* Step 4
Next add the onions to the soup also the Star Anise, Cumin and veg stock.
* Step 6
Next add the Spinach salt and pepper to taste.stir and cook for 20 minutes.
* Step 7
Take out the star aniseand discard. Add the soup to a blender you may have to do 2 lots. Blend until smooth. Add back to the pan bring to the boil
* Step 8
Mix the Cornflour/Starch to the cold Water and mix add to the soup stir and it will thicken.
* Step 9
Add to Serving bowls and serve with a little fresh parsley to Garnish.
