Toasted Rice Flour

Though you can use store bought Mochiko flour as a very near approximation to this homemade version, toasted rice flour is relatively easy to make. This product is used often as a thickener in Thai cooking and brings a uniquely nutty flavor, along with it's textural contributions. Using the proper rice is essential here, so make sure you find specifically Thai sticky or glutinous rice.

Cooking instructions

* Step 1

Heat rice in a heavy skillet over medium-low heat.

* Step 2

Shake or stir the pan constantly to ensure even toasting.

* Step 3

When the rice has turned golden brown, transfer to a spice grinder. Be careful, as rice will be extremely hot.

* Step 4

Process toasted rice to a fine powder.
