Mushroom and Bean Pesto Pasta

Mushroom and Bean Pesto Pasta

I needed to make an easy dinner for tonight and tomorrow, so I made a big batch of this simple pasta recipe using homemade pesto (recipe coming soon). I used gluten free pasta but you can use any pasta on hand. Change the quantities to suit your own preferences!

Ingredient

Food ration :

5-6 people

Cooking time :

30-40 minutes
350 grams (1.5 cups)

mushrooms (brown or white)

Cooking instructions

* Step 1

Bring a large pot of salted water to boil, add your pasta and cook according to instructions

* Step 2

While the pasta is cooking, chop mushrooms into slices and add them dry to a pan on medium high heat to sweat them

* Step 3

When the mushrooms have released their water, add a tab of butter, stir, and then add the can of beans (drained). Stir and cook until heated through. Season to taste with salt and pepper.

* Step 4

When pasta is cooked, strain and then add back into the pot. Add mushrooms and beans and stir to mix together.

Add as much pesto as you like, and stir to incorporate. Serve immediately and top with your favourite toppings such as feta, chopped nuts, or chilli flakes. Enjoy!
