Make-ahead Kidney Beans
I am not a fan of beans, but I have to admit, beans are pretty great! It’s funny how we sometimes crave things we do not even like, and when that craving hits, you have got to satisfy it ASAP. That is why I cook up a storm of kidney beans and freeze them, ensuring I have a three-month supply ready for any unexpected bean emergencies.

Cooking instructions
* Step 1
Remove any shriveled or broken beans. Rinse beans through a collander to thoroughly clean
* Step 2
Soak beans for 5 hour or overnight to soften and facilitate a faster cooking process
* Step 3
Either drain the soaked beans and place them in a large pot with fresh water or continue with the soaking water as the beans were previously cleaned already. Add the bay leaves, celery, garlic, and oil to the pot
* Step 4
Cook over high heat until tender and soft (about an hour or more), stirring the beans periodically to promote even cooking and adding more water as needed. Season with salt about 10 - 15 minutes before you think they will be fully cooked
* Step 5
Once cooked, let beans cool in the pot for storing. According to preference, drain beans completely or transfer them with a slotted spoon into ziploc bags or freezer-safe containers. To avoid draining, I personally cook them further down until I remain with just the right amount of liquid I am willing to store
* Step 6
Store beans in 2 cup portions for easy use when needed for refrying and other recipes
