Ceviche

Steve's creation. The raw fish will be cooked by the acid in the lime juice.

Cooking instructions

* Step 1

Slice the cod into 1 inch chunks. Add the peeled shrimp and Bay scallops. Marinade in the lime juice for 6 hours in the refrigerator.

* Step 2

Add olive oil, salt, pepper, red onion, garlic, and jalapeño to the fish mixture after 1st marinade. Let marinate for 1 hour.

* Step 3

Add the cilantro and avocado to the fish mixture, and serve immediately. May serve with tortilla chips, taro chips, and/or butter lettuce leaves.
