Cooking instructions

* Step 1

Stock: char the onion, leek, and celery over a flame until blackened

* Step 2

Add to a Dutch oven with 4 quarts of water and the other stock ingredients. Simmer for 1 hour. Strain and use 8 cups for the gumbo

* Step 3

Gumbo: soak the beans and peas overnight

* Step 4

Using a Dutch oven, add the oil and warm the oil until hot. Make a roux by adding the flour and stirring until toasted and browned, ~15 minutes. Then add the onion, celery, and bell pepper and store until soft, about 12 minutes.

* Step 5

Stir in tomato paste, chile, garlic. Add 4 cups of stock, stirring and then add 4 cups more. Bring to a boil and then simmer for 20-25 minutes.

* Step 6

Add the tofu and okra and simmer about 20 minutes, until beans are tender. Season with salt, pepper, file, and hot sauce. Serve.
