Cheesy Chicken Cacciatore

My hubby decided to go Kato and see what happens. So as the supporting and loving wife I am I began carb counting while still keeping some of my cooking the same. We normally would have this over mashed potatoes or pasta but since that's all out I'm adding mozzarella to make it more filling. (Guests showed up so ended up making "Garlic Parmesan Mashed Potatoes" as a bed for the chicken. 😜

Ingredient

Cooking time :

1.5 hours
2 tsp

bacon fat

1/2 tsp

garlic salt

1/4 tsp

black pepper

Cooking instructions

* Step 1

On medium high heat in a large frying pan, melt bacon fat.

* Step 2

Season chicken thighs with garlic salt and pepper on both sides.

* Step 3

Sear chicken in bacon fat, skin side down first.

Once the skin is crispy, turn the things to sear the other side for about 7 minutes.

Turn heat to medium low and pour the diced tomatoes over the chicken.

Add the rosemary and allow to simmer for 30 minutes.

Slice the bell pepper and onion while the chicken simmers.

Remove the rosemary stems. Cover the diced tomatoes and chicken with the sliced onion and bell pepper. Cover and continue to simmer for an hour.

Remove the lid and cover chicken and veggies with the mozzarella. Place under the broiler for 5-8 minutes.

Allow to rest for 10 minutes and enjoy hot.
