Spinach banana muffins

Hear me out...they look gross but they are fabulous. Great way for kids to get their veggies in.

Ingredient

Food ration :

12 muffins

Cooking time :

30 min
3/4 cup

almond milk

1/4 cup

honey

1/8 cup

maple syrup

1 teaspoon

vanilla extract

2 teaspoons

ground cinnamon

2 teaspoons

baking powder

1/2 teaspoon

baking soda

1/2 teaspoon

salt

Cooking instructions

* Step 1

Preheat oven to 350°F. Set aside.

* Step 2

In blender, puree the spinach, coconut oil, milk, honey, maple syrup, bananas, egg, and vanilla.

* Step 3

In a separate bowl, whisk the flour, cinnamon, baking powder, baking soda and salt.

* Step 4

Add to the wet ingredients in the blender and pulse just 2 to 3 times until JUST blended (some dry ingredients may still be visible).

* Step 5

Evenly divide batter into pans, filling 12 muffin cups.

* Step 6

Bake 18 to 20 minutes, or until muffins are firm on top.

* Step 7

Remove muffins immediately from pan to wire rack to cool completely before eating.
