Spinach Kitchari

Cooking instructions

* Step 1

Rinse the lentils and rice using cold, running water.

* Step 2

1 tbsp of oil was heated in a pan at medium heat. The onion was fried and salted slightly for 10 minutes until golden. Stir through the final chopped ginger, garlic, turmeric, coriander, chilli powder and half the cumin seeds.

* Step 3

Add the rice and lentils and also add the stock. Bring to simmer, cover and cook for 25 minutes with stirring every 5 minutes. Continue until the lentils are creamy.

* Step 4

Add chopped spinach and tomatoes and cook for 5 minutes.

* Step 5

Serve with warm chapatis.
