Roasted Potato, Egg & Chz Taco/Burrito
Cooking instructions
* Step 1
Toss diced potatoes with Salt, Pepper and oil.
* Step 2
Place partially seasoned potatoes in a heated pan of oil and butter. Bake (roast) til tender and slightly browned. Stir/toss potatoes while adding garlic and herbs halfway-through cooking cycle.
* Step 3
Scrambled eggs in a nonstick pan, or pan thats slightly buttered or oiled as to prevent sticking. Add salt and pepper to the eggs.
* Step 4
Sprinkle flour tortillas with shredded cheese blend (place atop damp paper towels) heat in microwave 15-30 seconds til warmed, cheese melted.
* Step 5
Place scrambled eggs onto cheesy flour tortillas, top with scrambled eggs and roasted potatoes. May add jalepenos, tomatoes, and /or salsa. Fold into a wrap, by tucking at least one end of tortilla atop food but under the sides of same tortilla.
* Step 6
For extra flavor: heat sliced jalepenos and diced onions with the potatoes, when potatoes are halfway through cooking cycle. (Same time you add the garlic and green herbs to potatoes)
