"Make Your Bed!" (Quail Eggs, Avocado, Cucumber, Rice, Sauce)

"Make Your Bed!" (Quail Eggs, Avocado, Cucumber, Rice, Sauce)

Sushi without the Fish!?? Maybe! Thinking on my own, trying to come up with new ways for Quail Egg dishes, as I was blessed with an abundance of Quail Eggs as a gift from my lovely neighbor. This turned out very pleasing and I hope your family may enjoy as well as mine does!

Cooking instructions

* Step 1

Boil Quail Eggs in salted water at a rolling boil for 6-7minutes, remove from heat, drain and place pan of eggs under cold running water til eggs are cold (several minutes)

* Step 2

To a saucepan, add 1/2c soy sauce, 1/2c Honey, 2Tbs Orange Marmalade, juice squeezed from 1/2 Lemon, up to 3Tbs each:Garlic Powder, Curry Powder, Ginger Powder, few shakes of Crushed Red Pepper. Bring to rolling boil for 2-3min, reduce heat and simmer at low boil, stirring often, til sauce is reduced, somewhat thickened. (5+min.) Remove from heat and allow to cool. (This thickens a tad more when completely cool)

* Step 3

In a separate pot/pan, boil 1c of dried rice in 2 1/2-3c of salted water. To this boil, add 1Tbs each of Garlic and Onion Powders. Bring the rice to rolling boil 5min, then cover, reduce heat for gentle boil/simmer for 10-15min, or until desired softness.

* Step 4

Carefully peel the shell from Quail Eggs, discarding shells and adding eggs to cooled sauce.

* Step 5

Peel, Halve, and Remove the seed from both Avocados. You may choose to remove a thin straight slice from the round part (bottom of the halve) caring not too slice too deep, into the well of the avocado. Trimming a flat strip from the bottom will better help the avocado to sit flat.

* Step 6

Cut cucumber in half. Using one half, thinly slice lengthwise for several slices.

With a measuring cup, pack 1c of cooked rice. Turn the measuring cup upside down and allow rice to make a bed on the plate. Be sure to sprinkle bed of Rice with Paprika.

* Step 8

Atop the Paprika-Sprinkled Rice, add a thin slice (or 2!) of the cucumber, press down to make the rice a bed or somewhat bowl and top with halved Avocado and 2 Quail Eggs.

* Step 9

Generously sprinkle more Paprika over entire dish, and spoon Sauce atop the eggs and rice, adding more sparingly to the plate. When eating, I suggest halving each egg to have with cucumber, avocado and rice with sauce in each bite! Use the sauce on the plate for each bite of remaining rice! Enjoy!
