Stuffed Italian Zuccini
Zuccini is one of the best veggies to grill. Its inside is soft enough to be easily removed and the outside layer is hard enough to be grilled without melting.
Cooking instructions
* Step 1
Thinly mince the Parsley.
* Step 3
Peel the Tomato and mince.
* Step 4
Chop the Mushrooms in quarters.
* Step 5
Mix all the previously prepared ingredients.
* Step 6
Wash the Zuccinis with plenty of water and cut them in halves.
* Step 7
Remove the insides with a spoon as shown in the picture.
* Step 8
You have to get something similar as the picture.
* Step 9
Stuff the Zuccinis with the mixed veggies.
* Step 10
Lay the Zuccinis on a tray and cover with plenty of Mozarella Cheese. Add a bit of extra Parsley, Salt and Black Pepper to taste.
* Step 11
Place the tray on the grill and cover with aluminium foil until the chesse completely melts.
