Sugar free whole wheat Jaggery cake
Sugar is one thing we struggle to avoid in our diets at all ages, and boy; isn’t it difficult! Jaggery is known to control anaemia, besides preventing constipation in kids, pregnant women and elders. Its loaded with antioxidants and minerals. Whole wheat used makes it a healthy dessert.Bake this cake to satisfy the sweet cravings of all

Cooking instructions
* Step 1
Microwave jaggery using 3 tbsn milk or heating it in a pan. let cool
* Step 2
Combine milk and vinegar in a bowl and keep aside
* Step 3
In another bowl, beat the egg and oil together.
* Step 4
Pour in the milk- vinegar, vanilla Essence and jaggery paste. whisk well
* Step 5
Seive in the flour, baking soda, baking powder & dry fruits
* Step 6
Combine well to form a thick batter and pour it in a greased baking tin/bread loaf pan
* Step 7
Bake for 30 minutes at 180 degree celcius or till done
* Step 8
Tips: Use powdered jaggery for quick and ease in dissolving it. Date palm jaggery tastes the best, however you may use any variety

Tip: keeping this cake healthy, avoid icing/frosting of any kind
* Step 10
Tip: For kids, check allergic reactions to nuts/ dry fruits and use accordingly
* Step 11
Tip: If you are fine with brown coloured porridge/desserts, jaggery can be an excellent alternative for sugar and can be used for kids, diabetic and for those watching their weight!
