Great Granola
Cooking instructions
* Step 2
In a small sauce pan, melt the butter.
* Step 3
Add the brown sugar, honey and vanilla.
* Step 4
Heat and stir until well blended.
* Step 5
In a very large bowl, combine the oats, nuts, dried fruit, cinnamon and nutmeg or mace.
* Step 7
Stir in the butter mixture until thoroughly blended.
* Step 8
Spread the oats evenly onto 2 ungreased baking pans. I use jelly roll pans or cookie sheets with a rim.
* Step 9
Bake for 30 minutes, stirring every 10 minutes.
* Step 10
Make sure to stir up all of the granola and move it around so it doesn't get over browned.
* Step 12
Let cool right on the pans.
* Step 13
Store in an air tight container.

cinnamon (I use Ceylon, China, or Vietnamese)
(9 cups) regular old fashioned oats
nutmeg (you can also use mace instead if you prefer)
brown sugar
butter
to 3 cups dried fruit (craisins, cherries, strawberries, raisins, blueberries, mango, pineapple, chopped apricots, raspberries, etc)
vanilla extract (I use extra)
honey (I use clover or wildflower)
