Puffed Rice Brittle

Basically it's a 3 ingredient magic that can be whipped up in no time at all with a few important tricks and tips. Both the Jaggery and the Puffed Rice should be equal in grams. Always use a thick bottomed pan. And last but not the least, syrup should be cooked well. If it's over cooked, the Chikki becomes soft. They should be thin and crisp always. It tastes yum and can be relished for a long time after making. These are absolutely healthy and Jaggery keeps us warm in Winters. That is why these are made extensively in the Season to keep cold at bay. Not only it's a great option for everyday Snacking, it's a quite healthy one as well. Kids love it and there is no doubt that these won't last longer if we make them. Enjoy these at Tea-time with family and friends on special holidays or even the Weekends. They taste delicious with a hot cup of Tea or Coffee.

Cooking instructions

* Step 1

Roast the puffed rice if desired on a low heat until crisp. Or use them directly. Set aside until use.

Meanwhile heat a teaspoon of ghee. Add jaggery and water to it. Cook on a low heat until it starts melting. As soon as it bubbles and becomes frothy, drop a small amount of it in a bowl of water. If it hardens and can easily retain shape, it's time to add in the puffed rice. It should snap easily when we try to break it. Add puffed rice now. Cook just for a minute.

Mix well vigorously and remove onto a greased plate or any surface. See to it that it's nicely coated with the syrup.

* Step 4

Place a butter paper on top and roll it thin. Do not keep it thick. It should be at least half an inch thicker so that we can get good chikki or brittle or gajak or patti that's neither too thin nor too thick. Sprinkle black sesame seeds on top without fail.

* Step 5

Using a knife, make cuts of desired shape when it's still hot. Let it cool down. Then break them accordingly and relish with your loved ones and friends. Due to the cuts, it becomes easier to break them. Store them in airtight containers and enjoy as long as they remain. Yum!
