Red Quinoa Mix Vegetable Risotto

Risotto is rice dish of Italian cuisine cooked with starchy short grain rice called Arborio and broth until it's creamy and luscious. The broth can be of Vegetables, Meat or Fish. In this one, I have used Vegetable seasoning cube instead. And have blended in fresh mixed Vegetables for a more creamier texture with Red Quinoa.

Cooking instructions
* Step 1
Wash and soak the quinoa in enough clean water for about an hour.
* Step 2
Meanwhile, heat olive oil and butter in a pot. Saute chopped garlic and onion until translucent and aromatic brown. Add all the vegetables followed by the well soaked and drained red quinoa to it now. Also add a cube of maggi seasoning. Cover and cook with some water added for 18-20 minutes.
* Step 3
After the stipulated time, uncover and give it a good mix. Adjust salt and pepper. Also stir in two tablespoon of any grated hard cheeses like parmesan or cheddar.
* Step 4
Cook for about 2-3 minutes more. That's it. Garnish with some freshly chopped coriander or parsley. Drizzle a little olive oil on top. Serve immediately. Enjoy!
