Celery and Coriander Soup

Celery and Coriander Soup at it's best. A warm a delicious Soup this Ramadan for a healthy and a satiating Iftaar. Kids and adults both would love this to the core.
It's best served warm with any Indian Bread of your choice. Though it can be served cold too. It tastes equally yummy.

Cooking instructions
* Step 1
Remove the leafy part of the celery at first. Wash and clean it thoroughly to get rid of any dirt. Chop it roughly. Set aside until use.
* Step 2
Also wash and chop the coriander leaves. Keep them aside too. Meanwhile heat oil in a pan.
* Step 3
Saute garlic and onion until translucent. Add both celery and coriander. Saute for a few seconds. Add stock and cover. Let it cook for a 4-5 minutes on a medium high heat.
* Step 4
Take it off the heat after the stipulated time. Season with salt and pepper. Allow it to cool and then blend to a smooth puree.
* Step 5
Bring a last boil once again so that it's nicely warm and delectable. Serve it immediately with a generous swirl of fresh cream. A small leaf of coriander in the centre of the serving bowl gives it a resplendent look. Enjoy!
