Leek and Potato Soup

Leek and Potato Soup is a great one for a filling meal especially at Iftaar after a day long fast. Nothing can be so very yummy and with an all Indian touch, this is every bit amazing.
With a few pantry staples, it's easily done. Leeks are available throughout these days and are easily procured. With creamy Potato, it is absolutely delicious.

Cooking instructions
* Step 1
In a kadai or a deep frying pan, heat olive oil and saute garlic. Also add chopped onion and the cubed potato.
* Step 2
Saute all of that for about 2-3 minutes or until translucent. Now add leek and let it cook on a low heat with some water. Add a maggi seasoning cube as well. Alternatively you can cook it in vegetable stock too.
* Step 3
After 8-10 minutes when it's done, take it off the heat. Cool and blend to a smooth puree. Season with salt and pepper.
* Step 4
Bring it to a single boil once again if desired and that's it. If you intend to serve it cold, then go for it directly without giving it a boil. Chill for a few minutes and serve.
* Step 5
Serve this beautiful looking Soup with a garnish of cream and coriander leaves or spring onions or chives whichever is convenient. Enjoy!
