My innovative simple recipe at it's best. In this particular recipe that iam sharing here today, i have used both Green and Yellow Zucchini Courgette peels. Goes well with plain Rice and tastes too good. Everytime you make use of both or either one of the Zucchini, use the peels also. Put them to use in this awesome stir fry dish. As it is, peels are always rich in Vitamins and Minerals. They can be used wisely to take advantage of their benefits. They can be stored in an airtight container in the refrigerator for about 2-3 days and can be cooked at your convenience. So do not throw them away. Store them and use accordingly.

* Step 1
In a pan, heat Oil at first. Now to it add all the powdered spices except the last two ingredients mentioned. To this add the washed and cleaned peels of both the vegetables. Mix well and cover with a lid. Keep the heat on a low. Stir it in between to check whether it's done or not. As the peels are tender, they get done easily.
* Step 2
The fry gets done real quickly. No fancy ingredients required nor it takes a lot of efforts. The spices are simple too. They can be adjusted accordingly.
* Step 3
Serve this beautiful dish alongside a steaming hot plate of simple boiled Rice and Ghee for a healthy comfort meal on any day. Enjoy!
